Soy honey glazed salmon with cauliflower fried rice

 
 

After the serious feasting...

that went down over the holidays in San Francisco, I’m back in Zurich, and need some tasty, light meals that still keep me feeling cozy during the winter. (Not to mention everything costs 3x as much, and tastes 3x as bland…)  For timing this meal right, I suggest reading the whole recipe as the salmon should be cooked right before you’re ready to eat, whereas the cauliflower fried rice is a bit more forgiving temperature-wise.  

Preheat the broiler, and get started on chopping things for your fried rice…

For the salmon:

2 person portion of salmon

Marinate the salmon is the following ingredients. I only marinated mine for about 30mins, but it could be left for up to 24 hours:

1 clove garlic, diced finely

a few thin slices of ginger, diced finely

2 tbsp light soy sauce

1tsp dark soy sauce (for color)

1 tbsp honey

2 tsp sake

1 dash sesame oil

pinch of salt and pepper

To cook the salmon:

Turn on your broiler to max heat. Let it preheat. Put the salmon in an oven proof dish. You may want to cover the dish with parchment paper, as the honey in the marinade can burn and cause a mess easily. When the oven is hot, place the salmon in the top level of the oven, and cook for around 7 mins. This can burn quite easily, so keep an eye on it and use your judgement! .But if you get it right, you should get a yummy, crispy surface on the meat and a center that is still tender and delicious. Top with toasted sesame seeds.

For the cauliflower fried rice:

Wash and shake dry your cauliflower. I used quite a big head of cauliflower, but I made A LOT (accidentally). So, use a smallish head. Roughly chop it. I used the greens also. Waste not, want not! Throw it in the food processor and pulse it until it resembles rice or couscous.

Heat up a wok, or large frying pan. Add 1tbsp oil (vegetable oil works best for high heat). Add chopped garlic and onion. I added some diced Chinese sausage here also, because I couldn’t resist…, but it’s optional.When it’s fragrant and you’ve rendered the fat from the sausage, add the cauliflower. Add a dash of soy sauce, and a pinch of salt and pepper. Create a well in your fried rice, crack an egg in there and scramble it while trying to avoid the cauliflower. Once the egg has cooked, mix it in to the rest of the fried rice. Add some chopped green onion, mix one last time and then turn off the heat.
